Suji ke Laddu

Ideal to satiate your kids' sweet cravings and loaded with nutrition, this recipe is a must-try. The ladoos are soft-textured and are an absolute delight for your taste buds! Make them during festivals or store them in a container. They have a long shelf life, upto 2 months or more. Enjoy!
                             
Suji/Rava (Semolina) - 1 kg
All-purpose flour - 2-3 tbsp
Cardamom Powder- 2 tspns
Sugar, ground- 1 cup
Ghee (Clarified butter) - enough to make it all come together as a dough
Some warm water to knead
Oil to deep fry
                                           
Mix together semolina, flour and ghee to form a crumbly mixture. Add warm water, enough for it to form a dough.

Next, shape balls roughly and deep fry.

Drain and let them cool a little,

Now, grind these fried balls coarsely. Remove in a bowl and add the ground sugar, cardomom powder and mix well.

Lastly, add enough melted ghee to form firm balls. Store in an airtight container or serve with tea.

Peri Peri Chicken

This recipe is a cinch to make. To be enjoyed with your whole family, it promises to add a flourish of spice and bakedness into your meal. An ultimate comfort food for chicken lovers ♥

Ingredients:

1 whole medium sized chicken, skin removed

For the marinade-

Red bell pepper : 1
Garlic cloves: 5
Vinegar: 3 tbspn
Oil : 1/4 cup
Paprica powder : 2 tbspn
Black pepper powder : 1 tspn
Dry red chillies : 6
Red chilli powder : 1 tspn
Oregano : 1tbspn

Method:

Wash Chicken thoroughly and make small slits all over it.

Blend all the ingredients, mentioned under marinade, together and apply all over the chicken. Marinate the chicken over night.

Next day, grill the chicken, basting it with the leftover marinade frequently till it is well cooked.

Serve wit your fav dip, potato fries, hummous and pita bread or any bread of your choice.

Kaju Katli

Ingredients

500gm Cashew Nuts, ground to fine powder  
250gm Sugar
200ml Water
Few strands of Saffron

In a non-stick wok, prepare sugar syrup. Add cashewnut powder into the syrup. Then add saffron. Cook till all ingredients are well combined, on low flame. Once it takes on a dough like consistency, switch flame off.

Now remove on a greased board and roll out. Let it cool a bit then cut into diamond shapes. Cool completely then serve.

Spicy Lamb Chops

Spicy Lamb chops

Ingredients

1 tbsp Coriander Powder
1 tsp chilli pdr
150 ml Corn Oil
3 tbsp curd
1 tsp Fresh Coriander Leaves
1 tbsp ginger garlic paste
10 number lamb chops
15 ml Lemon Juice
1 pinch maida
to taste Salt
2 tbsp vinegar

Directions

For Lamb chops first need to marinate them.

Take a bowl add curd,red chilli powder,pepper,salt,vinegar,sugar,coriander powder,coriander leaves,lime,flour and mix well.

Now add this mixture to lamb chops and mix well.

Take a non stick pan add oil to it then add the marinated chops into the pan evenly and cook for 5 min and turn over and close with a lid cook in very low flame for at leat 20 -30 min keep turning in between.

Cook till they become tender and golden brown color.

Chicken Cheese Kebabs

Ingredients
Chicken boneless 1/2 kg
Ginger Garlic paste 2 tablespoons
Green Chillies 6-7
Onion- 4 medium sized, chopped
Cream Cheese - 2 heaped tablespoons
All-purpose flour- 2 tablespoons
Garam masala powder- 1/2 tspn
Egg- 1, beaten
Oil- 2 tblspn

Boil chicken in 2 cups of water, adding salt and garlic-ginger paste. Cook until there's no water left. Cool and shred the chicken in your chopper.

In a vessel, heat oil and add onions along with green chillies. When it turns pink, make a hollow space in the middle of the vessel with a spoon and lower the flame. Add all-purpose flour and stir to mix with the onion. Immediately add garam masala, and cheese spread. Switch the flame off.
                                           
Cool this mixture and form shapes just how you like. You can refrigerate them for later use at this stage. Before shallow frying, dip the kebabs into the beaten egg. Serve hot with ketchup.

Strawberry Jelly Dessert

Strawberry Jelly Dessert

One packet of strawberry jelly
One vanilla cake
Amul Cream
Chocolate Chips or Grated Chocolate
Chocolate Sauce

Cook the jelly as per instructions and set in tilted transparent glasses (As shown in the image). Refrigerate the glasses. After the jelly is set, crumble slices of vanilla cake and create layers alongside the set jelly in every glass. Add cream, top with chocolate chips and chocolate sauce. Serve chilled.

Chicken Macaroni Soup

A healthy and nutritious bowl of steaming goodness!  Thats what this is. A must try, especially during the rigid winters. A soul warming soup :)

Chicken Macaroni Soup

1/4 kg Chicken, washed and cleaned
8 cloves of Garlic
1 onion chopped
1 cup elbow - shaped macaroni
1 tablespoon butter
Leaves of spring onion
1/4 teaspoon pepper
Salt

Create Chicken Stock. In 2 cups of water, add 4 cloves of garlic,1 medium chopped onion and salt. Reserve this.


Melt butter in a saucepan and add the remaining finely chopped garlic. When it sweats, add the chicken stock along with the shredded chicken. Add macaroni and cook. When it's done, garnish with chopped spring onion greens and pepper. Serve warm.
